Processing:
Cherries are hand-sorted to remove those that are under- or over-ripe, keeping only those with 18-22ºBrix. They're shade-dried on raised beds, turned for 3-5 days, then piled into plastic "cocoons" at night for 5-8 days. Finally, they're dried for 10-15 days until reaching 10-12% moisture.
Oh, "Habhab" means "watermelon" in Amharic.
