Supernatural Processed

Cherries are hand-sorted to select those with 18-22ºBrix sweetness. For the first 3-5 days, fermentation is controlled. At night, cherries are placed in plastic ‘cocoons’ for 5-8 days. During the day, they’re spread in thick layers on beds, turning frequently for 10-15 days until the moisture content reaches 10-12%. After drying, the beans are stored in their cherry pods to preserve and enhance sugar and fruit flavours.

At Koke, coffee trees grow naturally and wild, with no neat rows or pruning. They’re thin, lanky, and sprout wherever they like in the forest. This wild coffee thrives in dense, humid conditions, and the drying beds are placed in flat areas where the sun enhances the flavours. The result is unique, delicious coffee from wild, unpruned trees.
