About the Producer

Yao De Xian is a forward-thinking coffee producer in Yunnan’s Shuangjiang region. With a focus on innovation and sustainability, he leads The Nest Manor in developing new coffee varieties better adapted to the local environment. His work emphasizes both quality and resilience, aiming to elevate the specialty coffee scene in China.

About the Farm

Situated at elevations between 1,450–1,650 meters in Shuangjiang, Lincang, The Nest Manor cultivates a unique hybrid Geisha variety. Through natural cross-pollination in the “Xingxing” plot, they’ve developed a Geisha-centered hybrid population that maintains the original Geisha's floral characteristics while enhancing productivity and resilience. This approach reflects a commitment to both quality and environmental adaptation.

Processing Method

Washed

After a selective harvest of fully ripe cherries, the coffee undergoes flotation to remove immature and defective fruits. The parchment is then processed through a mechanical depulper and demucilager to strip away the skin and mucilage, followed by two successive washes to ensure enhanced cleanliness. The parchment coffee is subsequently dried on raised beds under shade for approximately 12 days until reaching a stable moisture level. Once fully dried, the coffee is sealed and rested in Ecotact multilayer packaging for 10 days to allow for moisture equilibrium and flavor stabilization. Finally, the beans are hulled to obtain clean green coffee for subsequent grading and storage.

This medium-light roast brings out the elegant floral and tea-like clarity of Yunnan’s hybrid Geisha, while developing enough sweetness to round out its bright, tangy acidity. The slightly longer development time enhances balance and structure, softening the sharper citrus edges and revealing layers of strawberry, poached rhubarb, and genmaicha-like toastiness. The result is a clean, complex cup that captures both the precision of washed processing and the expressive character of The Nest Manor’s terroir.

Freshly roasted coffee needs time to “rest.” In the first few days, it’s still releasing CO₂, which can make your cup taste sharp or gassy. Giving it a little time helps the coffee open up, bringing out more clarity, sweetness, and a cleaner finish.

For Espresso

Ready to open: Day 7 — can be aged and remain unopened til Day 34

After opening: Enjoy within 28 days

Espresso needs more rest than filter. During the first week, the coffee is still releasing gas, which can cause uneven extraction, mute flavours, and introduce sharp acidity. Allowing it more time lets the flavours settle, producing a more balanced, sweet, and structured cup.
