CM Honey Processed:

Cherries are picked ripe and dark red at 20-22º Brix and separated by farm sections. After floating to remove low-density cherries, they undergo extended fermentation in warm tanks for red and purple notes. They are pulped and dried as honey, first in thick stacks, then spread thinly for 18 days until moisture reaches 10-12%.
