How does it works?

More Flavour Info

Every coffee in our Smay's Filter Subscription is roasted to highlight its unique character. Taking into account the varietal, terroir, and flavours character of each lot. Roast levels are typically medium to medium-dark, with development tailored to bring out the coffee’s sweetness, body, and clarity, while focusing on balance and structure.

Each bag comes with a simple brew guide and grind reference printed on the label. Prefer a bit more detail? Once your coffee arrives, just head to our website, search your coffee by name, and you’ll find a more detailed brew guide to help you get the perfect cup.

Roasting Profile

• Roast level: Medium to Medium -Dark
• Total roast time: Up to 8'30 minutes
• End temperature: Max 205 °C
• RTD: around ~1:15 - 2:05 (~16 - 23% dev ratio)

Why it matters:
Espresso needs a little more depth to bring out sweetness, body, and balance under pressure. By tailoring each roast to the coffee’s character, terroir, and varietal, we highlight its natural flavours while ensuring a rich, syrupy shot with clarity and structure. From fruity and floral to chocolatey and bold, every delivery is roasted to help you pull the best possible espresso from each seasonal lot.

Why?
Espresso needs more rest than filter. During the first week, the coffee is still releasing gas, which can cause uneven extraction, mute flavours, and introduce sharp acidity. Allowing it more time lets the flavours settle, producing a more balanced, sweet, and structured cup.

(Once opened, coffee begins to age faster due to exposure to air. Enjoy within this period for the best experience.)
