The coffee behind our 4th place finish at the World Coffee in Good Spirits Championship 2026

This is the coffee Serene used across all of her competition drinks in Brussels, where she represented Australia and finished 4th at the 2026 World Coffee in Good Spirits Championship.

About the Producer

Jhoan Vergara is one of Colombia's most exciting young specialty coffee producers. Born in Pitalito, Huila in 1996, he grew up in a coffee-farming family and took over Las Flores from his father in 2018. What sets him apart is his training: alongside hands-on farming, he studied specialty coffee production, roasting and professional cupping through SENA, giving him a rare command of the whole process from tree to cup.


About the Farm

Las Flores is a 16-hectare farm at 1,750–1,900 masl in Acevedo, Huila. Jhoan grows an unusually wide range of varieties here: Java, Chiroso, Geisha, Pink Bourbon, Sidra and more — treating each one to its own custom fermentation and drying process rather than a single house method. That approach has made Las Flores a reference farm for experimental Colombian processing.

Processing Method

Hydrohoney

Hydrohoney is a hybrid process — part natural, part washed — developed to bring the two styles' best qualities into one cup. Ripe cherries are hand-picked, gently disinfected, and left to oxidize for up to 24 hours before undergoing a slow aerobic fermentation in a closed drum, boosted with mosto (a starter culture cultivated from the farm's own native yeasts). The cherries are then given a brief hot-water bath to lock in that fermentation, and dried slowly to a "half-dried" state. Here's the twist: those half-dried cherries are then mixed with a fresh batch of just-picked cherries and rehydrated together for a final fermentation, before drying to completion. The result is a two-toned batch of beans — some naturally dried, some washed — that combine into a single cup with the sweetness and body of a natural and the clarity of a washed coffee.

Pour Timeline:
•0:00 — Pour to 60g, circular, valve closed
•0:45 — Pour to 120g, circular, then open the valve
•1:10 — Pour to 200g

(Adjustment:Keep the valve closed through the first two pours (until you hit 120g) for a heavier, sweeter cup — the extra steeping time pulls more body. Or keep the valve opened for more clarity and lighter body)

Espresso

Machine: Any espresso machine
Basket: 18–20g standard or VST basket
Ratio: 1:2.2 — 18g coffee, ~40g espresso
Water Temp: 93°C
Total Shot Time: ~28–32 seconds

(Why: Stretching to 1:2.2 — a touch longer than a standard shot — gives you enough strength and sweetness to hold up under milk, without tipping into bitterness or getting lost once it's mixed in.)

Grind: Finer than your usual filter grind
Water Temp: 94°C

•0:45 — Pour to 120g, circular
•1:10 — Pour to 180g, then open the valve and let it draw down

(Why: This short, concentrated pour keeps the coffee's character intact once it's mixed with syrups, spirits or other ingredients)

Freshly roasted coffee needs time to “rest.” In the first few days, it’s still releasing CO₂, which can make your cup taste sharp or gassy. Giving it a little time helps the coffee open up, bringing out more clarity, sweetness, and a cleaner finish.
