About Producer & Farm

About the Farm

Buku Abel sits at roughly 2,000–2,300m in the Guji zone's Hambela district, about 400km south of Addis Ababa, in a landscape of dense forest, coffee trees and enset ("false banana") plants. The area's cool climate and high elevation slow cherry ripening, producing small, dense seeds with concentrated sugars. Farmers here have been trained to pick only fully ripe, blood-red cherries for maximum sweetness. Buku Abel's naturals won back-to-back 1st-place finishes in Ethiopia's Taste of Harvest natural category in 2016 and 2017, and this lot placed 6th in the 2025–2026 competition with a cupping score of 87.65.

Processing Method

Natural

Whole ripe cherries are laid in a single layer on raised African beds woven from bamboo, then dried under full sun for roughly 18–22 days, turned regularly and shaded during the hottest midday hours to prevent scorching. The slow, careful drying concentrates the cherry's natural sugars into the bean, producing the round, jammy sweetness and bright citrus florals this station is known for.

Brew Guide

How we brew:

Dripper: Hario V60 01 Switch
Filter: HiFlux V01 or Hario Speed-Flow
Ratio: 1:15 — 13g coffee, 195g water
Total Brew Time: ~2:00

Pour Timeline:
0:00 — Pour to 60g, circular, valve closed
0:45 — Pour to 120g, circular, then open the valve
1:10 — Pour to 200g

(Adjustment:Keep the valve closed through the first two pours (until you hit 120g) for a heavier, sweeter cup — the extra steeping time pulls more body. Or keep the valve opened for more clarity and lighter body)

Freshly roasted coffee needs time to “rest.” In the first few days, it’s still releasing CO₂, which can make your cup taste sharp or gassy. Giving it a little time helps the coffee open up, bringing out more clarity, sweetness, and a cleaner finish.
