About Producer & Farm

Project One Light, started in 2021 by Olina Cai, a coffee business in Yunnan that focuses on producing high-quality coffee. Their team of experts ensures that the coffee is grown and processed with care, following sustainable and ethical practices. Their goal is to keep improving Yunnan coffee and share it with the world while supporting everyone involved in the coffee-making process.

Processing Method

Anaerobic Honey Process.The farmers select ripe coffee cherries grown at high altitudes (1,300–1,500m) in Mangshi, Dehong.

The cherries are fermented in closed containers where temperature and humidity are controlled. Afterward, the beans are dried under the sun for two weeks.

This process gives the coffee a unique taste with floral aromas, blueberry-like acidity, honey sweetness, and a refreshing lychee flavour.

Freshly roasted coffee needs time to “rest.” In the first few days, it’s still releasing CO₂, which can make your cup taste sharp or gassy. Giving it a little time helps the coffee open up, bringing out more clarity, sweetness, and a cleaner finish.

After opening: Enjoy within 28 days

Espresso needs more rest than filter. During the first week, the coffee is still releasing gas, which can cause uneven extraction, mute flavours, and introduce sharp acidity. Allowing it more time lets the flavours settle, producing a more balanced, sweet, and structured cup.
