About the Producer

In 2007, Po Zha made the bold decision to leave his job in banking and return to his hometown in Yunnan to start a new chapter in coffee. Two years later, he founded Cimizhu Estate, with the goal of building a sustainable coffee community and creating new opportunities for local families.

The early years were challenging — many villagers were unfamiliar with coffee cultivation — but Po stayed committed. Through hands-on support, fair payments based on cherry quality, and rewards for outstanding growers, he gradually inspired the community to embrace specialty coffee.

His dedication to quality and collaboration has paid off: in 2022, Cimizhu Estate earned 2nd Prize (Unwashed category) in the Best of Yunnan Green Coffee Competition, a recognition of both the estate’s craftsmanship and Po’s leadership.

About the Farm

Founded in 2009, Cimizhu Estate covers 719 acres of farmland and produced around 580 tons of coffee cherries in 2014. Beyond growing coffee, the estate serves as a training ground for local farmers — offering education in pruning, cultivation, and harvesting to continually improve quality and yield.

By sharing knowledge and promoting innovation, Cimizhu Estate has become a cornerstone of community-driven coffee farming in Yunnan, helping local families build a more sustainable and rewarding future.

Processing Method

Washed

This Cimizhu Estate coffee is processed using the washed (wet) method to highlight clarity and brightness. Ripe cherries are handpicked and pulped, then fermented in water to remove the sticky mucilage. After thorough washing, the beans are dried on raised beds to the perfect moisture level.

This process lets the natural flavors shine. For this Sarchimor (T5296), expect sweet, tangy notes of strawberry sour straps and poached rhubarb, with a subtle toasty character reminiscent of genmaicha (popcorn tea). The result is a clean, bright, and expressive cup that showcases the unique personality of Yunnan coffee.
